Preheat oven to 375. Brown beef in a large skillet and drain grease. Add in taco seasoning and water and reduce. Add in onion and cook a few more minutes. Set aside.
Next, make the sauce. In a sauce pan add olive oil, onion, garlic and chili peppers. Cook down about 5 minutes. Add in tomatoes, water and seasonings. Bring to a boil & reduce and simmer for 10 minutes. Transfer sauce to a blender and puree or use an immersion blender and blend until smooth!
Next build the enchiladas. Add about 1/4 cup meat in a tortilla with some sauce and some cheese! Roll tight and transfer to a baking dish! Repeat with the rest of the tortillas. Pour on remaining sauce and top with extra cheese!
Bake at 375 for 20-25 minutes until nice and bubbly! Serve with all the fixings!
