Start by chopping veggies. Add olive oil to a large stock pot. Add in veggies and sauté for about 5 minutes. Add in chopped garlic and cook 1 minute. Add in butter and flour. Cook for 2 more minutes.
Pour in chicken broth and season with salt and pepper. Bring to a boil. Once boiling add in 2 chicken breasts. Reduce heat to simmer and cover for 20 minutes!
Meanwhile, make dumplings! Mix flour, baking powder, salt, pepper and thyme in a bowl. Pour in cream and stir gently until combined. Form into 1 inch balls.
Once chicken is cooked about 20 minutes. Remove chicken and cube then add back into the pot. Bring back up to a boil and add in dumplings! Make sure they're spread out around the pot! Reduce to simmer. Cover and cook another 20 minutes or until dumplings are cooked through!
Turn heat off and stir in cream. Taste and season if necessary! Garnish with parsley and cracked pepper!
