Chicken and Dumplings

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion
  • 2 carrots
  • 3 stalks celery
  • 2 cloves garlic
  • 2 tbsp flour
  • 1 tbsp butter
  • 6 cups chicken broth
  • 2 tbsp parsley
  • 2 chicken breasts
  • 1 tbsp salt
  • 1/2 tbsp pepper
  • 1/4 cup heavy cream

For the Dumplings

  • 2 cups flour
  • 1 tsp baking powder
  • 1 1/3 cup cream or milk
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp thyme

Instructions
 

  • Start by chopping veggies. Add olive oil to a large stock pot. Add in veggies and sauté for about 5 minutes. Add in chopped garlic and cook 1 minute. Add in butter and flour. Cook for 2 more minutes.
  • Pour in chicken broth and season with salt and pepper. Bring to a boil. Once boiling add in 2 chicken breasts. Reduce heat to simmer and cover for 20 minutes!
  • Meanwhile, make dumplings! Mix flour, baking powder, salt, pepper and thyme in a bowl. Pour in cream and stir gently until combined. Form into 1 inch balls.
  • Once chicken is cooked about 20 minutes. Remove chicken and cube then add back into the pot. Bring back up to a boil and add in dumplings! Make sure they're spread out around the pot! Reduce to simmer. Cover and cook another 20 minutes or until dumplings are cooked through!
  • Turn heat off and stir in cream. Taste and season if necessary! Garnish with parsley and cracked pepper!
