Start by chopping onion, carrot and celery to bite size dices. Mince garlic. Saute all veggies in a large pot in a little olive oil for about 5 minutes or until tender.
Add in seasonings and chicken broth and bring to a boil. Toss in the shredded chicken and orzo. Reduce to simmer & cook for about 25 minutes, stirring occasionally.*add more water if you'd like it a little more "soupy"
Stir in spinach and let whilt down about 2 minutes. Taste and season! Ladle and top with a little parsley & parmesan cheese.
