Start by seasoning chicken well with salt, pepper and garlic powder.
Heat a large skillet over med heat with 1 tbsp olive oil. Cook chicken for 4-5 minutes per side. Remove and set aside.
In the same pan, add in chopped onion, (+ any other veggies, optional**) and cook until tender, about 3 minutes. Add in minced garlic and rice. Toast for another 1 minute.
Add in chicken broth and bring to a boil. Turn heat to low and cover for 18 minutes. After 18 minutes turn the heat off. Keep the lid closed. Steam 2 more minutes
Fluff with a fork. Toss in your chicken, a 1/4 grated parmesan cheese, and 1 tbsp butter. Stir to combine and melt the cheese. Taste for seasoning.
Top with balsamic glaze and more parmesan cheese. Serve and enjoy!
