Beef Enchiladas
I know it may be a little early to think about but what do you eat for Christmas dinner?! When I was growing up my parents always had a lavish Christmas Eve party with crab dip, Beef Tenderloin, spinach dip, all the things! Since times have changed we’ve started going a little more untraditional and low key!
My favorite meal by far was when we did some tamales, queso and enchiladas ! I actually think I’m going to bring it back this year, because there is just something about a comforting meal and easy on a cold holiday night! If that’s what you’re thinking this year go ahead and put these on your list they are sooo delicious and could be made ahead and heated up for dinner!

Beef Enchiladas
Ingredients
For the sauce
- 1 tbsp olive oil
- 1/2 onion chopped
- 3 tbsp chopped chipotle peppers
- 2 cloves garlic minced
- 1/2 can diced tomatoes
- 1/2 cup water
- 1 tbsp chili powder
- 1 tsp cumin
- salt and pepper
For the Enchiladas
- 1 lb ground beef
- 1 pack taco seasoning
- 1/2 onion chopped
- 8 flour tortillas
- 2 cups Mexican Blend Cheese
Instructions
- Preheat oven to 375. Brown beef in a large skillet and drain grease. Add in taco seasoning and water and reduce. Add in onion and cook a few more minutes. Set aside.
- Next, make the sauce. In a sauce pan add olive oil, onion, garlic and chili peppers. Cook down about 5 minutes. Add in tomatoes, water and seasonings. Bring to a boil & reduce and simmer for 10 minutes. Transfer sauce to a blender and puree or use an immersion blender and blend until smooth!
- Next build the enchiladas. Add about 1/4 cup meat in a tortilla with some sauce and some cheese! Roll tight and transfer to a baking dish! Repeat with the rest of the tortillas. Pour on remaining sauce and top with extra cheese!
- Bake at 375 for 20-25 minutes until nice and bubbly! Serve with all the fixings!
