Chicken and Dumplings

Such a classic dish that I rarely ever eat but I’m going to have to change that because this was goood! And like I always say, soooo easy! These homemade dumplings are delicious! Seems like a lot of work but don’t let that intimidate you! 4 ingredients will make the fluffiest dumplings you’ve ever tasted! I added a little thyme because it gives them such a fresh flavor!

I love making this for a comforting Sunday family dinner! So hearty and warming! Makes it so nice that it comes together all in one pot! The chicken cooks in the broth but you could also use rotisserie for an even quicker dish! I hope you and your family love it!!

Chicken and Dumplings

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion
  • 2 carrots
  • 3 stalks celery
  • 2 cloves garlic
  • 2 tbsp flour
  • 1 tbsp butter
  • 6 cups chicken broth
  • 2 tbsp parsley
  • 2 chicken breasts
  • 1 tbsp salt
  • 1/2 tbsp pepper
  • 1/4 cup heavy cream

For the Dumplings

  • 2 cups flour
  • 1 tsp baking powder
  • 1 1/3 cup cream or milk
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp thyme

Instructions
 

  • Start by chopping veggies. Add olive oil to a large stock pot. Add in veggies and sauté for about 5 minutes. Add in chopped garlic and cook 1 minute. Add in butter and flour. Cook for 2 more minutes.
  • Pour in chicken broth and season with salt and pepper. Bring to a boil. Once boiling add in 2 chicken breasts. Reduce heat to simmer and cover for 20 minutes!
  • Meanwhile, make dumplings! Mix flour, baking powder, salt, pepper and thyme in a bowl. Pour in cream and stir gently until combined. Form into 1 inch balls.
  • Once chicken is cooked about 20 minutes. Remove chicken and cube then add back into the pot. Bring back up to a boil and add in dumplings! Make sure they're spread out around the pot! Reduce to simmer. Cover and cook another 20 minutes or until dumplings are cooked through!
  • Turn heat off and stir in cream. Taste and season if necessary! Garnish with parsley and cracked pepper!
