Chicken Orzo Soup

As you know I am coming out with a budget friendly meal plan and you guessed it, this is one of the NEW recipes that will be in it! I was going to keep them all a secret but, I just can’t stand it! I had to share!

This is absolutely amazing!! Comes together in 30 minutes and literally the easiest thing you’ll do all day!! Perfect for a chilly fall or crisp winter night!

Also, talk about the best chicken “noodle” soup ever, if you’re feeling a little under the weather this is for you! I served mine with some biscuits but Ritz crackers would be delicious too!

Chicken Orzo Soup

Prep Time 10 minutes
Cook Time 25 minutes
Servings 4

Ingredients
  

  • 2 cups rotisserie chicken
  • 1 tbsp olive oil
  • 2 carrots
  • 2 stalks celery
  • 1 onion
  • 2 cloves garlic
  • 32 oz chicken broth
  • 8 oz water
  • 1 lb orzo
  • 1/2 bag spinach
  • 1 tbsp salt
  • 1 tsp pepper
  • 1 tbsp italian seasoning
  • dash red pepper flake
  • parsley/parmesan *optional*

Instructions
 

  • Start by chopping onion, carrot and celery to bite size dices. Mince garlic. Saute all veggies in a large pot in a little olive oil for about 5 minutes or until tender.
  • Add in seasonings and chicken broth and bring to a boil. Toss in the shredded chicken and orzo. Reduce to simmer & cook for about 25 minutes, stirring occasionally.
    *add more water if you'd like it a little more "soupy"
  • Stir in spinach and let whilt down about 2 minutes. Taste and season! Ladle and top with a little parsley & parmesan cheese.
