Sausage, Arugula & Tortellini Soup

The weather is getting cooler and fall is officially here!!! Soups are one of my favorite comfort foods and the best part is they are always so incredibly easy!! Throw it all in a pot and forget about it, and this one is just that!!

I made it in an instant pot, which means less time and more flavor, but you can always just use a regular pot and let it simmer for a while or use a crockpot and let it cook all day long! Either way it will turn out delicious!!

I used a ground breakfast sausage but you could most definitely use ground turkey or chicken depending on your preference! Also, I believe the tortellini makes it but you could always use whatever pasta you like! OK, lets get to it!

Sausage & Tortellini Soup

Ingredients
  

  • 1 lb breakfast sausage
  • 1 tsp olive oil
  • 1 onion chopped
  • 2-3 cloves garlic minced
  • 1 can fire roasted toamtoes
  • 32 oz chicken broth
  • 8 oz water
  • 1 bag cheese tortellini
  • 2 handfuls arugula
  • 2 tbsp pesto
  • 1/2 cup grated parm
  • 1-2 tbsp italian seasoning
  • 1 tsp red pepper flakes
  • 1/2 tsp cavendars
  • 1 tbsp chopped parsley

Instructions
 

INSTANT POT METHOD

  • Start by turning IP on high and browning sausage in a little oil. 
  • Add in garlic and onion and seasonings and cook for a few minutes. 
  • Pour in fire roasted tomatoes, chicken broth and water. Add in pasta
  • Close lid and cook on high pressure for 4 minutes! (about 20 total)
  • Remove lid and add in arugula, a few dollops of pesto and parmesan cheese! 
  • Ladle into bowls and garnish with extra cheese, pesto and a little parsley! 

STOVE TOP

  1. Start by turning pot on medium heat and browning sausage in a little oil. 
  2. Add in garlic and onion and seasonings and cook for a few minutes. 
  3. Pour in liquid. Fire roasted tomatoes, chicken broth and water. Bring to a boil and reduce to simmer.
  4. Add in pasta and simmer for about 20 minutes or until pasta is cooked through. 
  5. Turn off heat, stir in arugula, pesto and cheese.
  6. Ladle into bowls and garnish with extra cheese, pesto and a little parsley! 

CROCK POT

  1. In a large skillet brown sausage in a little olive oil over medium heat. Add in onion and garlic and cook for another 2-3 minutes!
  2. Remove from heat and add to crock pot. Pour in liquid and seasonings and cook on high heat for 3 hours. 
  3. After 3 hours add in tortellini and let cook for another hour! 
  4. Stir in arugula, pesto and cheese and a little more water if necessary. 
  5. Ladle into bowls and garnish with extra cheese, pesto and a little parsley!
