One-Pot Parmesan Rice & Chicken

One-Pot Parmesan Rice & Chicken

Cook Time 15 minutes
Servings 4


  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 cup diced onion
  • 2 cloves minced garlic
  • 16 oz chicken broth
  • 1 cup uncooked white rice
  • 1 tbsp butter
  • 1/4 cup Parmesan cheese
  • dash of red pepper flakes
  • salt and pepper to taste
  • 1 drizzle balsamic glaze


  • Start by seasoning chicken well with salt, pepper and garlic powder.
  • Heat a large skillet over med heat with 1 tbsp olive oil. Cook chicken for 4-5 minutes per side. Remove and set aside.
  • In the same pan, add in chopped onion, (+ any other veggies, optional**) and cook until tender, about 3 minutes. Add in minced garlic and rice. Toast for another 1 minute.
  • Add in chicken broth and bring to a boil. Turn heat to low and cover for 18 minutes. After 18 minutes turn the heat off. Keep the lid closed. Steam 2 more minutes
  • Fluff with a fork. Toss in your chicken, a 1/4 grated parmesan cheese, and 1 tbsp butter. Stir to combine and melt the cheese. Taste for seasoning.
  • Top with balsamic glaze and more parmesan cheese. Serve and enjoy!
