Instant Pot Roasted Garlic & Parmesan Risotto

I have officially meal planned around the instant pot! I love this thing!! So quick and easy and works GREAT!! I will definitely be making many more of these meals. Also, this risotto is JUST as good as if you were to use the typical method!! I was very pleasantly surprised!! It took 5 minutes and was VERY easy!! Lastly, you can add in any flavors you like!!! Mushrooms, truffle spinach, sausage, the list goes on!! Let me know what you try!!
Ingredients
- 2 cups Arborio Rice
- 1 tbsp olive oil
- 1 tbsp butter
- 1 chopped onion
- 1 clove roasted garlic
- cut clove in half, horizontally, drizzle with olive oil and wrap in foil. Cook on 400 for 35-45 minutes.
- 1 cup white wine
- 32 ounces chicken broth, warmed
- 1/2 cup parmesan cheese
- 1 tbsp butter
- 1/2 tsp salt
- 1/4 tsp pepper
Directions
- Start by turning on the Instant Pot to the saute function on high. Saute onion in 1 tbsp butter and a drizzle of olive oil. Cook for 3 minutes.
- Squeeze in roasted garlic and cook for 30 seconds. Add in 2 cups of arborio rice and toast for about 2 minutes. Pour in 1 cup white wine and let it cook and reduce completely.
- Add in 32 ounces of warmed chicken broth. Turn Instant Pot to “high pressure” and set timer for 5 minutes.
- Once complete, manually release pressure and open lid. Stir in parmesan, butter, salt and pepper. Garnish with extra cheese and a drizzle of olive oil. ENJOY!
Makes 4 cups of rice, about 8 servings!!
