Chicken Flautas

These were the bomb dot comb! Does anyone say that anymore!? LOL but really they were so yummy! I served them with some guac. and some spicy sour cream π I used a crock pot to make my chicken which was falling apart and so flavorful. Then all i did is wrap them in tortillas and fry them! You could totally bake these too!!! Give these a try!! Would be YUMMY in a Siete gluten free tortilla, just a side note!
Ingredients
For the chicken:
– 3 chipoltes in adobo
– 2 tbsp adobo sauce
– 2 garlic cloves
– 2 tbsp olive oil
– 1 tsp cumin
– 1 tsp chili powder
– salt and pepper
– 1 lb chicken thighs or breasts
For the flautas
– Flour tortillas
– Shredded cheese
– oil for frying

Directions
1. In a small food processor add in all ingredients, besides chicken. Puree until smooth!! Pour into a slow cooked and massage into chicken thighs. Add a little liquid, about 1 cup. Can be water or chicken broth! Cover and cook on high for 4-6 hours!
2. Once chicken is cooked through! Shred. I like to do this in a stand mixer!
3. Heat 1 inch of oil in a large heavy bottom skillet. Meanwhile, make the roll ups. Start with 1 tortilla about 2 tbsp of chicken and a sprinkle of cheese. Roll up tightly and tooth pick! Repeat for the remaining tortillas.
4. Fry in oil on each side for about 2 minutes. Drain on a wire wrack and ENJOY!!!!
Makes 8-10 flautas
