Chicken Alfredo Roll-Ups

I’ve seen lasagna roll ups before and will definitely be trying those too, but I’m so glad I made up this version! SO easy and SO delicious. They were crunchy on the outside and super creamy in the middle and tasted just like chicken alfredo. 🙂 So easy to reheat and you can even eat them cold! I am going to get creative and try some different versions soon, but give these a try in the meantime!
Ingredients
– 2 cups shredded chicken
– 10 lasagna noodles
– 1 cup chopped spinach
– 1 garlic clove, minced
– 1/2 cup whipping cream
– 1/2 cup grated parmesan
– 1/2 cup greek yogurt
– salt
– pepper
Directions
1. Boil pasta according to package instructions. Meanwhile, place 1 tbsp of oil and garlic in a sauce pan. Turn heat to low and cook for 30 seconds. Add spinach to the pan and allow to wilt for another 30 seconds. Pour in cream and bring up to a simmer. Stir in parmesan cheese until sauce has thickened. Remove from heat, stir in greek yogurt and salt and pepper.
2. To assemble roll ups, take one noodle, spread a thin layer of sauce on the whole noodle, sprinkle on chicken and roll. Place in a greased baking dish seam side down. Repeat with the remaining ingredients. Top each roll up with extra sauce, and a sprinkle of parmesan.
3. Bake at 375 for 15 minutes. ENJOY!
