Beef and Cheese Enchiladas

Cheese enchiladas slathered with queso 🙂 These are my go-to when I eat at Mexican restaurants! There is nothing to them but they are just so delicious and really remind me of my childhood and my dad! We both LOVED them!! I basically recreated these and added in some ground beef to add a little protein! They were so delicious that we ate them all! Here’s how I made them!
Ingredients
For the Queso Sauce:
– 1/2 yellow onion, diced
– 1/2 block of Velveeta cheese
– 1/2 cup of shredded cheddar cheese
– 1 can diced green chilies
– 1 cup milk
– 1 tsp chili powder
– 1 tsp garlic powder
– 1 tsp paprika
– 1 tsp cumin
– a dash of cayenne
– salt
– pepper
For the enchiladas:
– 1/2 lb cooked ground beef, seasoned with taco seasoning
– 1/2 cup shredded cheddar cheese
– 1/2 yellow onion, diced
– 8 Siete tortillas
Directions
1. Start by making the queso. Satue the onion in about 1 tbsp of oil. Let cook for 2-3 minutes until translucent. Add in spices and toast for about 30 seconds, then add in the whole can of green chilies. Reduce the heat to low and pour in about 1/2 of the milk. Let milk come to a simmer and add in the 1/2 package of Velveeta and 1/2 cup shredded cheddar. Stir continuously. You want the queso to be “pour-able” so add remaining milk until it gets to the consistency you like. Remove from heat.
2. Next, assemble the enchiladas. Spray a large baking dish with nonstick spray. Place one tortilla in the dish and layer in a handful of cheese, 2 tbsps of ground meat and a sprinkle of onion. Gently roll tortilla and place seam side down. Repeat this with the remaining tortillas. Once all are assembled, pour on the cheese sauce. Top with remaining onions and bake on 375 for about 15-20 minutes.
3. Top with diced avocado, fresh cilantro and your favorite hot sauce. Enjoy!
