Broccoli Cheddar Rice Casserole

WOW! I have to admit this recipe is so old I actually said, “I don’t like casseroles!” but, I have completely changed my stance on casseroles! They can be so darn easy and delicious without all those not so great ‘cream of’ soups. This one is so incredibly good, perfectly cooked rice, tender broccoli, juicy chicken and a little cheese :).

We totally devoured this! You could completely leave out the chicken if you want it to be meatless or add in rotisserie for a even quicker dish!! So cheesy, creamy & oh so comforting! Hope you all enjoy!

Broccoli Cheddar Rice Casserole

Prep Time 10 minutes
Cook Time 20 minutes
Servings 4 servings

Ingredients
  

  • 2-4 chicken breasts
  • 1-2 tbsp olive oil
  • 2 cups broccoli chopped
  • 1 cup rice
  • 2 cups water
  • 1-2 cups shredded cheddar cheese
  • 1/2 cup milk
  • 1 tbsp salt
  • 1/2 tbsp pepper

Instructions
 

  • Start by cubing & seasoning chicken with salt and pepper and your favorite spice blend. Cook in 2 tbsp olive oil in a large skillet. About 5-8 minutes or until cooked through. Remove from pan and set aside
  • In the same pot, add in 1 chopped onion and saute. Stir in your 1 cup rice and toast 1 minute. Add in your 2 cups chopped broccoli and 2 cups of water. Bring to a boil.
  • Cover and cook on low for 20 minutes.
  • Once rice is cooked, fluff with a fork. Add back in your chicken, 1/2 cup milk and 1-2 cup shredded cheddar cheese. Stir to combine and cook on low until cheese is melted and chicken is warmed through.
  • Serve and enjoy!
