Parmesan Chicken and Red Pepper Grits

I really don’t think there is a grit that I don’t like, and these definitely didn’t disappoint! The red bell pepper added such a sweet smokey flavor that just took them over the top! The creamy cheesy grits paired so well with the crunchy chicken!! I kept taking bites and saying gosh, this is so good! You definitely need to give this one a try!
Ingredients
For the chicken:
– 2 chicken breast
– 1/2 cup of panko
– 1/2 cup of parmesan cheese
– 1 egg, whisked
– 1/2 cup flour
– 1/2 tbsp italian seasoning
– 1/2 tbsp garlic powder
– salt and pepper
For the grits:
– 2 cups of water
– 1 cup of chicken broth
– 1 cup of grits
– 1 cup of cheddar cheese
– 1 cup of chopped roasted red pepper
– 2 tbsps butter
– salt and pepper
Directions:
For the chicken:
1. Pat chicken dry, season with salt and pepper. Set up dredging station. In the first shallow bowl add flour and 1/2 of the seasoning, in the second bowl whisk an egg and salt and pepper. In the final bowl place breadcrumbs, parmesan and other half of seasoning.
2. Heat 2 tbsp of olive oil in a large skillet and heat to med-high.
3. Coat chicken in the flour then egg and finally the breadcrumbs. Place in hot oil and cook for 4-5 minutes per side.
4. Meanwhile, start the grits. In a medium sauce pan, boil water and chicken broth. Once boiling whisk in grits and cook for about 10 minutes, stirring constantly.
5. Once mixture is nice and thick add in butter, red pepper and cheese. Season with salt and pepper to taste!
6. Spoon some grits on a plate and top with crunchy chicken! ENJOY!
