Chocolate Sheet Cake aka Bea’s Cake

This is one of my favorite cakes and I’m not a big cake eater!! It is so moist, chocolate-y and deliciously rich!! It reminds me of the holidays when we would drive to Abilene for Christmas. As soon as we arrived I would walk in the kitchen and go straight for the fresh baked cake sitting in the kitchen! My grandma’s friend ‘Bea’ would make it for us and so we called it ‘Bea’s Cake” but really its just a delicious chocolate sheet cake! Let me tell you how she made it!

Ingredients

For the cake:
2 cups sugar
2 cups flour
2 sticks butter
3 tbsp. cocoa powder
1 cup water
1/2 cup buttermilk
2 eggs, slightly beaten
1 tsp baking soda
1 tsp vanilla


For the Icing:
1 stick butter
3 tbsp. cocoa powder
1/4 cup milk
1 box powdered sugar, sifted
1 tsp vanilla
1 cup chopped pecans

Directions

For the cake:
1. In a large bowl sift together flour and sugar. Set aside
2. Meanwhile, in a saucepan, melt 2 sticks butter, 3 tbsp. cocoa, and 1 cup water and bring to a boil.
3. Remove from heat and stir into flour and sugar mixture. Stir in buttermilk, eggs, baking soda and vanilla.
4. Pour into a greased 13×9 baking dish and bake at 400 for 20-25 minutes.

For the icing:
1. In a saucepan, melt 1 stick butter, 3 tbsp. cocoa, and 1/4 cup milk. Bring to a boil, stirring often.
2. Add to a bowl with 1 cup powdered sugar, vanilla and pecans.
3. Mix well. Pour on cake while warm. Let come to room temp and serve!!
